What’s so special about “Late Disgorged” Champagne? Sparkling wine is conceptually a frame for the complex flavors that arise from the breakdown of the yeast over time (this process is called reductive autolysis), rather than the flavors of the fruit. The complexity is derived from the reactions and interaction of these breakdown products - largely yeast proteins. The longer the time "en tirage" (on the yeast), the more complex the flavors of the wine. Short aging gives simple, direct flavors that come from the fruit, and leaves the sparkling wine tasting more acidic. Long aging gives a creamy mouth-feel, complex and subtle flavors and aromas ranging from yeasty, baked bread, brioche, toast, burnt sugar, to candied ginger, earth, mushroom, marmite and soy. These breakdown products also temper the sensation of high acidity and make the wines rounder, smoother and richer. These characters build and accumulate over long periods of time, typically a minimum of 3 years for any significant autolytic character, and continue to develop and change as long as the wine is left "sur lie" (on the lees).
Certainly the base wine is also developing, with chardonnay typically providing a mineral backbone plus flavors of green apple and pear and pinot noir providing roundness, breadth, strawberry, cherry, and occasionally earthiness. Good base wine is generally fairly neutral, with faint but complex flavors, tight acidity and low tannin. Typically, high production, low quality sparkling wines are 3-18 months “en tirage”, higher quality “methode champenoise” are 2-4 years, and “tete de cuvee” (which are by far, the best Sparkling wines and Champagnes on the market) are held longer.
